According to permit documents filed with the city, Paris Baguette will open at 8839 Lyra Dr, in Polaris. The franchisee-operated brand opened the first Columbus location this summer at Easton, and at that time, it was the second Paris Baguette to open in the state.

The Lyra Drive location franchisee, Ebram Botros, spoke with What Now Columbus and shared that the Polaris cafe will come in at nearly 3,200-square-feet and he is currently aiming to open the location at the end of November. Botros, who comes from a family that owns Greek and pizza restaurants in Columbus, said once the Polaris Paris Baguette has launched, the plan is to open more cafe locations in 2025.
“We hoped to open last year, but we took our time and we’re excited about opening the franchise in the heart of Polaris,” he said.
The French-inspired bakery cafe got its start in South Korea and began its expansion into the U.S. beginning in 2005, according to the bakery’s website. With menu offerings that range from cakes, cookies and assorted pastries to sandwiches and salads, along with coffees, everything is baked on-site and made fresh daily at each bakery cafe.
The Polaris Paris Baguette is currently accepting applications for all positions through Indeed, and Botros plans to hire close to 35 employees for the location. The planned service hours will be from 6 a.m. to 9 p.m., seven days a week. Botros plans to launch an Instagram account for the Polaris location prior to the store’s opening.
