Owner of Bibi’s Patties Joseline Celestin tells What Now Columbus that while it’s too early in the permitting process to know final details such as the opening date of the restaurant, she did share that the eatery will focus on both takeout and dine-in service. When construction is complete, Celestin estimates that the establishment will have seating for around 20 guests.

Celestin has sold the patties, which are a type of savory pastry filled with meat or vegetables and seasonings, as a farmers market vendor where she gained a following. After serving the community at the markets and through catering, she is ready to take the next step, and give her repeat customers more of what they’ve been asking for.

“People have been asking me, where can I find your food,” she said.

When the restaurant opens, guests can expect to get “a taste of lakay” which means home. Although she said she has been living in the U.S. for a long time, she and her family are originally from Haiti. And her goal with Bibi’s Patties has always been to introduce the Columbus community to a taste of Haitian food.

With that goal in mind, Celestin said the menu offerings will expand once the brick and mortar opens. She plans to continue to offer the patties, which are available with ground beef, chicken, fish or vegetable fillings, along with other dishes she grew up eating such as porridge, Haitian spaghetti and soups, as well as offering some street food items. Bibi’s Patties will also offer some Haitian style beverages such as a variety of juices and “cola” which Celestin said is a Haitian soft drink that’s on the sweeter side.
