There will soon be a new place to get your caffeine fix, when Blue Sky Coffee opens at 3070 Presidential Dr, in the Wright State University Foundation building in Fairborn, according to recent reporting on the matter. Although it’s a coffee shop in name, the business aims to be more than a space to drink coffee. Owner Matthew Stevenson tells What Now Columbus he plans to foster an environment ripe for creativity and sharing ideas, through design elements such as floor to ceiling chalk walls and white boards where guests can draw, share their ideas or collaborate with others.
In addition to the unique walls, the 900 square foot space will also include past innovations that have came from the Dayton area in various areas of the shop. “I want to inspire people to come up with new ideas, and as I’ve been looking into the history more and more, I think it will be cool for people to learn what has come out of Dayton,” Stevenson said.
Although the interior details are still being worked out, Stevenson said the shop will have seating for around 30 guests. The shop will feature coffee from Twisted River as well as sourcing coffee beans from other local roasters. Coffee lovers won’t be disappointed, as the menu will include everything from traditional drip coffee to pour over style as well as espresso based drinks like lattes.
There will also be various teas, and Stevenson said he’s currently working on partnering with a local tea company. In addition to the coffee and tea, Blue Sky Coffee will also have hot chocolate, as well as small bites like bagels, coffee cakes, muffins and fruit cups.
According to information on its website, Blue Sky Coffee was born out of a passion for creativity blended with a love of coffee. The business is built by creatives for creatives, and it will be a space for guests to drink coffee, connect with friends, brainstorm big ideas and innovate incessantly, the website states. Additionally, Stevenson hopes that a part of that creativity will include hosting open mic nights or artists shows in the space.
Stevenson’s background includes working in the food industry, including in coffee shops and a cocktail lounge, and he credits those previous experiences with helping shape the ideas he has for Blue Sky Coffee.
“I’ve always wanted to venture out into my own space and take what I’ve learned and build something new.”
The current timeline for opening Blue Sky Coffee is early 2024.
