French Bistro Concept Arriving Downtown This Summer

Chouette’s menu will be led by a renowned French chef and will feature a selection of French wines as well as a cocktail program.

According to a recent Columbus Business First article, a new French Bistro concept is coming to downtown this summer. The eatery, called Chouette, is coming to 2 E Gay St, and is being brought to the city by Makeready, a part of Columbus based investment firm Rockbridge Capital. Last month, What Now Columbus reported on the announcement by Makeready that it was opening Hank’s Lowcountry Seafood & Raw Bar, which will be located across the street from Chouette, at 6 E Gay St.

In addition to the two new concepts slated to open on East Gay Street, Makeready also currently operates Columbus eateries Little West Tavern and Brass Eye at The Junto hotel. 

According to the Columbus Business First article Makeready President and COO Christine Magrann referred to Chouette as a classic –but not stuffy–French bistro. Consulting on the menu is French chef Jacques Sorci, who has worked in 5-star and Michelin star-rated luxury hotels and restaurants across the U.S. and Europe, including the Rainbow Room and Arizona Biltmore in Phoenix.

The food offerings will lean heavily on bread and pastry selections, along with menu items such as escargot topped with a puff pastry and steak frites. The article details that the wine selection will be overwhelmingly French, but the bistro will also feature a cocktail menu.

In terms of seating, there’s room for 121 guests inside and 44 on the patio. 

While a definitive opening date hasn’t been announced, Makeready is aiming to launch the concept this summer.
