Roost Modern Italian will pivot to offer small plates in a fine casual service model and will be rebranded as Culina.

According to a recent article, one Dayton eatery is making plans to rebrand and offer a different menu as well as a new name. Roost Modern Italian, located at 524 E 5th St, will undergo “a significant transformation in its dining experience, unveiling a pivot to a ‘fine casual’ service model,” per an announcement on its website.

As part of the rebranding, the restaurant will be renamed Culina and will offer small plates. Another new offering as part of the rebranding, is that Culina will offer lunch service, with selections such as fresh salads. The eatery will also no longer take reservations, although accommodations can be made for parties of 8 or more. 

Chef and owner Dana Downs tells What Now Columbus that the rebrand is really a pivot that’s the culmination of Downs’ experience, responding to needs of the post-Covid world and listening to what the Dayton community is asking for. 

“I started Roost almost 13 years ago, and I’m excited to bring the knowledge I’ve gained from the restaurant, travel and culinary experiences to Culina,” Downs said. “There’s a gap for finding a nice salad, or clean cuisine for lunch that’s not bar food and so many have asked for it, so we’re trying to fill that niche.”

Even though the menu offerings will change, the eatery’s commitment to offering a variety of menu items to accommodate different dietary needs will remain, and gluten-free, vegetarian and vegan selections will be on the new menu. 

Culina’s price point will range from $14 to $26, and once the rebrand is complete, Downs will continue to honor any Roost gift cards that guests wish to redeem. Follow Culina on Instagram or Roost on Facebook to learn when the rebrand will officially launch.
