Pizza Bandit is planning to move its operations from outside of Yellow Cab Tavern, to a new kitchen space inside the tavern.

According to a recent Dayton Daily News article, a Dayton pizza eatery is making plans to expand soon. For the past five years, Pizza Bandit has operated out of a food truck parked outside of Yellow Cab Tavern, located at 700 E 4th St, in Dayton, and now the business will move into a kitchen space inside the tavern.

Co-owner Brian Johnson tells What Now Columbus that the move is “the next step in the evolution of Pizza Bandit.” Johnson owns the business with James Burton and Mark Jeffers, and through the food truck, the menu has offered hungry customers everything from whole pies and pizza by the slice, as well as burgers and loaded hot dogs like macaroni and cheese hot dogs and lobster mac dogs. 

With the move, guests can order and eat onsite, as well as order online for delivery and carryout options. The new kitchen will offer more space for equipment, help with increased production and allow Pizza Bandit to offer expanded menu items.

“We’ll be able to expand our cold storage, which is always a problem in a food truck,” Johnson said of the move.  

In addition to having more storage space, the kitchen will feature a six-burner range and bigger ovens than what they had in the food truck set up, which means the team will be able to reduce customer wait times and cook more pizzas. With the added equipment, Pizza Bandit will offer new menu items that extend beyond pizzas, including breakfast selections on weekends. 

“We’re adding bakery items like cookies and cakes, specialty pizzas and salads.” 

Johnson said that Pizza Bandit also plans to offer special events, like chef nights that will feature multi-course selections. 

Although Pizza Bandit is moving out of the food truck, Johnson said right now, the plans for the food truck haven’t been firmed up yet, as the team is primarily focusing on the move to the new kitchen, but he doesn’t rule out repurposing it for a different concept in the future.
